Fuji Cutlery is a subsidiary of TOJIRO, making traditional Japanese blade shapes in molybdenum vanadium stainless steel rather than a hard clad core. Softer than VG10 at around 58 HRC, which means less edge retention but quicker recovery on a stone and more tolerance for a busy kitchen. Blades are ground and heat treated offshore, then finished, sharpened and inspected at the Sanjo City factory in Niigata. The Reigetsu line covers yanagiba, santoku and nakiri on magnolia handles.
