A Wusthof original — the Rotoku is what happens when you take the traditional Santoku and add three more jobs to it. Where the classic Santoku covers the "three virtues" of meat, fish and vegetables, the Rotoku adds chopping, serving and transporting. Six functions, one blade. The name comes from roku, the Japanese word for six.
The curved edge does something genuinely useful: it combines the smooth rocking cut of a European chef's knife with the precision of an Asian-style blade. The wide profile gives you a working surface — scoop chopped onion off the board, slide it into the pan, no second utensil. The hollow edge creates small air pockets that stop slices sticking to the blade, which matters more than people expect when you're working through potato, cucumber, or anything starchy.
Finished in Wusthof's deep-black Diamond-Like Carbon (DLC) coating — heat-resistant, scratch-resistant, and noticeably lower-drag than a standard polished blade. The Hexagon-Power-Grip handle keeps the knife controlled even with wet or oily hands, and the full bolster gives it the balance you'd expect from a forged Wusthof. Made in Solingen from a single piece of chromium-molybdenum-vanadium steel, hardened to 58 HRC and finished with Wusthof's Precision Edge Technology.

Care
- Hand wash only in warm soapy water and dry immediately with a soft cloth
- Never dishwasher safe — heat and detergents will damage the DLC coating and edge
- Hone regularly with a honing steel to keep the edge true between uses
- Sharpen only when genuinely dull, using a whetstone, sharpening rod, or pull-through sharpener
- Cut on wood or poly boards — avoid marble, glass, metal, or bamboo
- Store in a knife block, magnetic strip, knife roll, or in-drawer organiser
