A long, tapered 26cm carving blade built for the big tasks — whole roasts, large hunks of meat, dense vegetables. Where shorter knives stall and tear, the Performer glides through in clean single strokes, with the control and weight you need to make a presentation cut count.
The blade is finished in Wusthof's deep-black Diamond-Like Carbon (DLC) coating, a heat-resistant, scratch-resistant surface that reduces drag through food and stays looking the way it did out of the box. The Hexagon-Power-Grip handle keeps the knife planted in your hand even when it's wet, and a full bolster gives the blade weight where it needs it and balance where it counts. Forged in Solingen from a single piece of Wusthof's chromium-molybdenum-vanadium steel, hardened to 58 HRC and finished with Wusthof's Precision Edge Technology.
Carving, slicing, filleting — this is the knife you reach for when the rest of the block isn't enough.

- Hand wash only in warm soapy water and dry immediately with a soft cloth

- Sharpen only when genuinely dull, using a whetstone, sharpening rod, or pull-through sharpener
- Cut on wood or poly boards — avoid marble, glass, metal, or bamboo
- Store in a knife block, magnetic strip, knife roll, or in-drawer organiser
