A larding needle is the chef's tool for threading strips of fat or seasoned lardons through lean cuts of meat before slow cooking. Worked through hare, venison, lamb, beef roasts and game birds, the fat melts as the meat cooks, basting from the inside out for richness and moisture the surface couldn't reach.
