Shippu means stormy wind, and the blade earns the name. A VG10 cobalt alloy core is forged between folded layers of low and high carbon stainless steel, 37 of them, which is what produces the rippled Damascus pattern running the length of the blade. The core is the part that cuts. The outer layers give the knife its flexibility and its rust resistance, so a hard Japanese edge sits inside a blade that still forgives a busy kitchen.
The handle is Japanese magnolia, chosen because it resists water and stays smooth in the hand, shaped into the traditional D profile and finished with a water buffalo horn ferrule that locks the blade and stops it working loose over years of use. These are light knives for their size. SHIPPU sits at the top of the TOJIRO range and is made in Niigata Japan.
At 9cm this is the knife for peeling turning coring and anything that happens in the hand rather than on the board.
