Flash is TOJIRO's Damascus range, sold in Japan as Senkou, and it is built around a VG10 cobalt alloy core wrapped in 37 folded layers of low and high carbon stainless steel. The layering draws the rippling pattern across the blade, and it is also what lets TOJIRO run a genuinely hard core without the whole blade becoming brittle.
The handle is a reinforced laminate, the material sold in the knife trade as Micarta. It shrugs off moisture, heat and knocks, will not swell or split the way timber can, and holds grip when your hands are wet. A stainless bolster sets it off, and the blade to handle join is curved rather than squared off so it sits under the finger instead of pressing into it.
A deba is the Japanese fish knife: thick and rigid through the spine so it can go through the head collar and frame of a whole fish without the blade flexing or the edge rolling. This one is ground asymmetrically on the right side only, in the traditional single bevel style, which is what lets it ride the bone cleanly and lift a fillet without tearing. At 302g with a 3.7mm spine it has the mass to do the work. Ground for right handed use.
