Smith's 25cm (10in) Diamond Oval Sharpening Steel sharpens and realigns your knife edge between full sharpenings. Its oval rod gives a larger working surface than a round steel, and the overlapping oval hole pattern is coated in multiple layers of micron-sized monocrystalline diamonds. Those holes collect and hold the metal filings that normally build up, which keeps the surface cutting and speeds the job up.
Why it works
- Oval profile increases the sharpening surface on each stroke
- Diamond coating hones and realigns the edge quickly
- Interrupted surface traps metal filings so the steel keeps working
- Soft grip rubber handle and oversized hand guard for comfort and safety
- Plastic tip protects your benchtop when you sharpen point down
- Hang-up ring for easy storage
Care
For the sharpest edge, hold a consistent angle of around 23 degrees, sharpen only on the oval faces (not the edges of the steel) and use an equal number of strokes on each side of the blade.
