The pan is the 50cm polished carbon steel, the entertaining size, comfortable for fourteen portions of thin Valencian rice. The burner sits underneath at 40cm, two concentric rings with independent control so you can adjust heat across the pan as the dish moves through its stages. The reinforced 3-leg stand lifts the rig to 75cm — standing height for cooking outdoors at a courtyard or backyard setup. A regulator and hose complete the kit, ready to connect to a standard LPG gas bottle (bottle not included).
The polished pan develops a dark seasoned surface over time — the surface that creates the socarrat at the bottom and makes the crust paella is known for. Polished carbon steel needs seasoning before first use and careful drying after every wash to keep rust at bay.

Care
Hand wash the paella pan with warm soapy water, dry thoroughly, and wipe with a light film of oil after drying to season the surface and protect against rust. The burner and stand wipe clean with a damp cloth. Not dishwasher safe.
Safety
For outdoor use only. Connect only to standard LPG gas bottles using the included regulator and hose. Check all connections for leaks with soapy water before lighting. Keep flammable materials clear of the burner during use. Allow the burner and pan to cool completely before disassembly.
