The original. Garcima is the Valencia workshop most professional kitchens think of when they think paella, and the Andreu set is their mobile configuration — the pan, the burner, and the wheels-and-tray stand bundled as a complete outdoor rig.

The pan is the 46cm polished carbon steel, the standard entertaining size, comfortable for twelve through a thin Valencian rice. Under it sits the 40cm two-ring burner with independent inner-and-outer ring control, so heat moves with the dish through its stages. The three-legged stand rolls on two wheels for easy repositioning around a courtyard or patio, with a tray underneath sized to hold tongs, oils, and condiments within easy reach during service. Hose and regulator complete the kit, ready for a standard LPG gas bottle (bottle not included).

The polished carbon steel pan develops a dark seasoned surface over time — the working surface that delivers the socarrat at the bottom and gives paella the crust it's known for. Polished pans need seasoning before first use and careful drying after every wash to prevent rust.

Care

Hand wash the paella pan with warm soapy water, dry thoroughly, and wipe with a light film of oil after drying to season the surface and protect against rust. Burner, stand, and tray wipe clean with a damp cloth. Not dishwasher safe.

Safety

For outdoor use only. Connect only to standard LPG gas bottles using the included regulator and hose. Check all connections for leaks with soapy water before lighting. Keep flammable materials clear of the burner during use. Allow the burner and pan to cool completely before disassembly.
