Fowlers Vacola Jamsetta helps jam set without excessive boiling, making it easier to achieve a more consistent result while keeping a brighter colour. It is a simple way to take some of the guesswork out of jam making, especially when working with fruit that can be harder to set.
As a general guide, 1 x 50g packet suits 1.5kg of raw fruit. Pectin levels vary by fruit type, and some fruits — particularly strawberries and tropical fruits — are naturally low in pectin and may need additional Jamsetta to achieve a good set. If jam has not set after using Jamsetta, return it to the pan, stir through more Jamsetta, bring back to the boil, and boil for a further 5 to 10 minutes before retesting.
Jamsetta contains castor sugar, pectin, and citric acid, and remains potent for several years if stored unopened.
