A forged carving knife with a serrated edge, built for the jobs where a straight blade slips or tears. The serrations bite into crust, skin and crackling instead of sliding off, so a roast or a loaf is cut rather than pushed. X50CrMoV15 steel at 56 HRC holds the edge, the chromium and molybdenum keep corrosion off, and the edge is honed and polished rather than just ground, which is why it slices cleanly instead of crushing what it cuts. Forged and balanced so the weight sits between blade and handle rather than dragging to one end during a long carve. The half bolster gives a finger guard without blocking the heel, so the full edge stays sharpenable. Handle and blade join without a gap, so nothing collects in the seam.
