Copper, a truly noble material, ensures rapid and even heat distribution, for precise cooking that respects the ingredients. Ideal for making perfect jams, caramels, or pastries while preserving the texture, colour, and natural aromas of the fruit. Built to last and enhancing even the most demanding dishes, ideal for precision recipes and lovers of traditional cooking methods. More than just a utensil, tinned copper is a true kitchen companion.
Designed and manufactured in France, these copper basins are a symbol of ancestral know-how.
Copper promotes caramelization, making it the ideal material for working with sugar. It is also renowned for its excellent heat conductivity, ensuring even and perfectly controlled cooking, perfect for preserving the texture and aroma of the fruit. Used for generations for cooking jams, sugar and delicate preparations, it is prized for its unparalleled thermal properties and timeless aesthetics.
Using the confectionery, pastry, and distilling basin results in better sweet recipes because the pectin molecules naturally present in the fruit are released during cooking and act as a natural gelling agent.
The traditional flared shape of these pans promotes evaporation and a homogeneous mixture. The handles are made of cast iron and are riveted for lifelong durability.
