A bread knife with the blade set into a timber frame, so it cuts a consistent thickness every time rather than wandering thicker at the bottom the way a free-hand knife does. The blade is the same carbon-coated bread slicing blade used in commercial bakery slicing machines, so it goes through a crusty sourdough without tearing the crumb. It comes out and reverses for left-handed use, and a shield covers the edge when it isn't in use.
Handmade in Tasmania from three Tasmanian timbers laminated together: Blackwood in dark brown with lighter bands, Myrtle in rich reds and orange tones, and Celery Top Pine, which starts pale yellow and darkens to a mellow rose gold with age. The contrast between the three is the point, and it shifts over the years as the pine colours.
