Care & Cleaning
Rinse under hot running water while still warm and scrape off any stuck-on food with a wooden or steel scraper before it cools. Skip the soap where you can, as it erodes young seasoning, and never put the pan in the dishwasher. Dry thoroughly, then sit it on a warm stovetop to remove any last moisture before storing. While the pan is new, finish with a thin coat of oil to protect the seasoning. The pan has a carefully engineered concave base, which is normal for heavy-based iron and steel pans and allows the metal to expand when heated.
A Patchy Pan is Normal
Your pan arrives naturally seasoned with pure rice bran oil, so some surface variation is completely normal, even on arrival. It won't affect performance. With every cook the seasoning evolves into a surface that's uniquely yours.
