X50CrMoV15 steel hardened to 56 HRC holds that edge and sharpens back easily on a steel. The handle is round in an Asian style rather than the flat Western profile, sitting in the pinch grip a paring knife is actually used in, and the non-slip plastic stays secure with wet hands. Balanced through the bolster so it doesn't feel blade-heavy in close work. Made in Germany at Deizisau, from steel machining through to the final edge.
