Solid acacia with a ceramic conical burr, which is the mechanism worth paying for. Ceramic doesn't corrode against salt the way steel does, and the conical shape crushes rather than tears, so you get an even grind at whatever coarseness you set it. It comes with two interchangeable knobs, one for salt and one for pepper, so a pair of these can be labelled and told apart at a glance. Filling is straightforward: unscrew the knob, lift the lid, fill, and put it back. Acacia is a natural timber, so the colour and grain vary piece to piece.

Care: hand wash gently and dry with a cotton cloth. Do not submerge or put in the dishwasher. Polish the acacia occasionally with vegetable oil to maintain the finish.
