Microplane blades are photo-etched rather than stamped, which is why they cut the food instead of tearing it. That matters most on citrus zest, where a torn zest goes bitter and a cut one releases its oils cleanly, and on parmesan, which comes off as a light cloud rather than damp shreds. The same blade turns garlic, ginger, shallots and onion into a fine paste without the fibres you get from a stamped grater.
This is the Black Sheep version, black through the handle, frame and blade, with a PVD coating for scratch resistance. A rubber foot on the end stops it sliding when you are grating over a bowl, and it comes with a cover so the blade can go in a drawer without being blunted.
