Traditional knives carry a high-carbon steel blade and a classic stained rosewood handle with brass rivets, a combination prized by butchers and meat tradespeople for its keen edge and timeless feel. The carbon steel takes a very sharp edge and is easy to re-sharpen, though it needs drying and care to keep it at its best. The range spans boning, butcher, skinning, cleaver and specialty knives.
