The original. Garcima is the Valencia workshop most professional kitchens think of when they think paella, and this is the polished version of their smallest pan — 12cm across, 2cm deep, with a black handle and a dimpled base for even heat.
For service: blinis, individual pancakes, single fried eggs, tapas like gambas al ajillo or chistorra. The polished carbon steel develops a seasoned surface over time that holds heat hard for a proper sear.

Care
Polished carbon steel needs a quick seasoning before first use: rinse, dry, wipe with a thin layer of vegetable oil, heat over medium until the oil just smokes, cool, and wipe out. After every use, hand wash with warm water, dry immediately and thoroughly, then wipe with a light film of oil before storage. Not dishwasher safe.
