The Vegetable Chopper, also called a Cài Dāo, is a traditional Chinese-style knife. The slightly curved blade allows for fast, efficient rocking chopping. The indentations on the blade reduce food clinging to the blade. The wide blade is useful to scoop and transfer from the chopping board.
