The 120mm professional mandoline used in commercial kitchens worldwide. The wide cutting surface handles produce that won't fit on a standard mandoline: cabbages, watermelon, daikon, large potatoes, fennel. The hand-finished Japanese stainless steel blade is sharp enough to slice translucent or thick to 9mm with a single dial turn.
Made in Yamaguchi, Japan, by Benriner. The standard in professional prep stations for over 70 years.
Important: blades are razor sharp. Always use the included finger guard, especially when slicing the last portion of a vegetable. Most mandoline injuries happen when the guard is removed for convenience.
