A two-sided water stone that covers both halves of sharpening. The 1000 grit side repairs and reshapes an edge that has gone dull or picked up minor damage, then you flip it to 3000 to refine and polish what you have just cut. That combination is enough to take a knife from blunt to razor finish without owning a drawer of separate stones.
It is a water stone, so it soaks before use and cuts with a slurry rather than dry friction, which is what gives the finer control over the edge. Suits Japanese knives and harder steels as well as German blades.
