Between them sits a much finer cut that only engages under light pressure, straightening and honing the edge for daily maintenance. The pressure in your hand selects the action, so there is no swapping tools mid-service. The flat profile puts more of the blade in contact with the steel than a round one does, so the edge comes back in fewer passes. Hardened above 65 HRC and made in Germany by a company that has been making steels since 1778.
